Aaji’s Weeknight Pasta
Aaji’sSummer Pasta
One Of Our Family’s Favorite Summer Pastas With AAJI’S Tomato Lonsa
Ingredients:
3/4 lb of linguine
2 tbsp of olive oil
2 medium zucchini, cut into 1/4” dices
2 cups of halved cherry tomatoes
Salt to taste
AAJI’S Garlic Tomato Lonsa — or whichever Lonsa you prefer!
Process:
Bring a pot of water to a boil. Add a generous pinch of salt and then add 3/4 lb of linguine. Cook to al dente and drain, reserving 1 cup of liquid.
While pasta is boiling, heat 2 tbsp of olive oil in a skillet. Add 2 medium zucchini, cut into 1/4” dices. Sprinkle with salt and sauté on medium heat until zucchini are cooked through, about 5min.
Add 2 cups of halved cherry tomatoes to zucchini, cook for another 2min. Turn off heat.
Next, stir in at least 6 Tbsp of AAJI’S Garlic Tomato Lonsa (or whichever Lonsa you prefer!). You can certainly add more Lonsa for more flavor!
Add drained pasta to the Lonsa-veggie mixture, and mix to combine. Add pasta water as needed for Lonsa-veggie mixture to coat pasta.
