Why do you use canola oil instead of olive oil?
Traditionally in India this dish was made using a neutral tasting ground nut oil, which is similar to canola oil. We also temper spices at the beginning of the cooking process at a high heat. Studies have shown that olive oil degrades at high temperatures and loses its beneficial properties.
